This salad can be either used side salad or a main dish, I decided that this would be lunch for a couple of days so I added quinoa to make it a bit more filling. I really do love this dish as it’s warming while being light and fresh, and here’s how it comes to be:
2 large courgettes, sliced with a peeler to create long strips
1/4 diced cucumber
Juice of 1/2 orange
125g fresh spinach
1 large garlic clove
1/2 red pepper, de-seeded
1tbsp extra virgin organic coconut oil
1 chopped stick of celery
150g quinoa
Small handful of fresh chopped coriander
For the dressing:
Juice of 1/2 an orange
1tbsp red wine vegar
1tbsp extra virgin olive oil
Pepper to season
Heat the coconut oil and orange juice in a large pan and add the garlic until fragrant
Add the courgette and turn until it starts to brown.
Mix in the pepper, cucumber and celery.
Remove from the pan into a large bowl and mix in the spinach, quioa and coriander.
Sprinkle the dressing over your salad, mix again and serve.

Thank you! Courgettes is the British word for Zucchini, we got the French version, the US got the Italian π

Do it it’s a really lovely salad, maybe 30 secs in the microwave or even cold will do the trick π
